My phone is stuck on a screen with these icons and won't go any further. What can I do ? Am I bricked?

What were you doing prior to this? Possibly try a battery pull and start over as well...

I was trying to revert back to 2.1 but I don't remember just where I was. When I press the power button I get The "M". and then nothing happens. I hold down the home,volume and power buttons and get the droiod icons along with the Triangle with an exclamation .

now press the Search key
Now it reboots and comes back to the M and then nothing else , it just keeps displaying the "M"

The android + yellow triangle is the recovery menu. You press search and then there's some options. Pull the battery and try rebooting - if that doesn't fix the problems go into the recovery (Home+Power when turning phone on), and go to wipe data.
Now, you were trying to revert back to 2.1?. It's either you read the instructions or you didn't. To access the bootloader (which you'll need to do to use the SBF), you hold camera+vol down+power. Go for it. Rootzwiki.com has the SBF guide.
Here's some advise - if you don't know what you're doing, don't do it (as in use leaked roms/root).

Too late to take that advise but I sure wish I had. I can't get anything to work. When I go into bootloader by holding down the buttons mentioned I see:reboot system now, when I do it comes back to the M. I try the apply sd card:update.zip and it tries to load but aborts install. I use : wipe data/factory reset and reboot to only see the M again. At bottom of the screen in yellow letter it says : E:Can't open /cache/recovery/command. I'm Really concerned.

Ok, again, that's not the bootloader. Bootloader is camera+volume down+power. Recovery is home+power.
The cache/recovery/command crap is normal.
I'm not sure WHAT you did, but if you want your phone back to normal you should be able to SBF flash:
Rootzwiki has the files/guides for this. Just go to the droid X page and follow the SBF flashing guide to the dot and you'll be back up and running in no time.
When I go to that page and DL the Droidx gift and go to unzip with Winrar it says:Adobhe can't open. What do I need to open it with?
