If you're on Froyo, z 4 will root your phone. Gingerbreak works on both Froyo and Gingerbread. Rooting your phone, just gives you su access, I'm not sure I understand what you mean when you say "doesn't completely root or "unlcok" the Droid x."
What are you trying to get done?

Z4 does completely root the DX, here's a guide
My phone is completely stock. I used z4root once already but wireless tether wouldnt work nor could I install ApeX. As far as ApeX goes, theres a good chance I was just doing it wrong, but is z4root a the best way to root a stock phone?
I used it and from what I got out of it is that it give u super user permission for other "rootable" apps ...still new to this, so don't qoute me..LOL..

z4 definitely roots the phone giving you superuser ability.
unlocking a phone allows you to switch to a different cellular provider. z4 does not do that, that i'm aware of.
i have seen threads here about unlocking, but you'll have to search for them. have read people switch to cricket.
running gingerbread 602 SBF
Root is root, plain and simple. One method may be easier than another, but the destination is the same.
When you hear unlocked, that is refering to the bootloader. The bootloader on the x is encrypted and will not be unlocked. Phones that are unlocked allow for a greater variety of roms and kernals like cyanogen mod.
To change carriers the process would require flashing your phone (and some other modifications that I am not familiar with). You run the risk of really screwing your phone up with this if you don't know what you are doing.
I used z4root and installed ApeX. These guys are great at providing clear and concise directions. Plenty of tutorials in here to help you do pretty much anything.
